Lamprey in its capital

David is as taciturn as Sabine is talkative. He has been a lamprey fisherman from generation to generation and she enhances the fish he catches. Both preserves and verrines are available in the traditional bordelaise sauce (lamprey, leeks, red wine) as well as in sweet white wine or with rillettes and can be tasted in Sainte-Terre, the historical capital for lamprey fishing. Facing the placid waters of the green Dordogne river, in their tiny shop, Sabine is quite the animated storyteller when it comes to the mythical fish.
