A true institution in the region, the aillet stands out for its delicate garlic taste which will delight garlic fans and content even the most reticent. The aillet is in reality nothing more than a green garlic stem that resembles a small leek. It’s to be eaten raw with a bit of salt, and is most commonly prepared in omelettes. A highly popular product, the aillet is a delicacy that has been regularly consumed since the 16th century.
