Corrézon au Torchon is a traditional strained cream cheese made using savoir-faire from Limousin. This is an unpasteurised cow’s milk cheese which owes its name to its semi-circle shape and cloth straining. After wrapping the curd in a cloth, Corrézon au Torchon is left to strain for two days then salted and matured for 1 to 3 months.
