You can find eels directly from local fishermen and in some fishmongers in the region.
Eels are readily found throughout the region and fished in the Adour and Garonne rivers, and on the Gironde waterways. Fishermen use trawlers and traps as well as lines.
The thick mucus that covers the eel allows it to survive for a long time out of the water. These fatty fish are usually sold alive and fresh. Eels and their fry are in ‘critical danger of extinction’ according to the IUCN and for the last 3 years, have benefited from a European protection plan. It is therefore recommended to take a reasonable approach to consumption and to only buy from authorised fishermen as poaching is the main cause of this risk of extinction.
