Farmers, millers and bakers from the Basque Country come together to offer a high-quality bread which is produced from start to finish in the Basque Country. They have shared a desire to face the challenges of tomorrow: maintaining and diversifying agriculture across the country, producing and eating locally and enabling fair payment of all stakeholders.
Around ten farmers have agreed to sow bread wheat seeds, something that hasn’t been done for 40 years. Their main goals are to maintain fertile soils through rotational crops, to limit water use and to make agricultural activities sustainable. HERRIKO wheat comes from varieties which are adapted to the Basque Country’s soils and climate. It is produced in accordance with specifications that guarantee fair farming which respects the environment and the consumer.
Two family flour mill businesses have committed to the process, with the hope of creating a local supply, setting up a new outlet for farmers and acting in the name of sustainable development by reducing wheat transport. HERRIKO flour is made from wheat which is grown exclusively by Basque Country farmers. It is a traditional French flour which does not contain any additives or preservatives.
Around fifty artisan bakers invested in the sector and used their savoir-faire to manufacture HERRIKO bread. It is kneaded and baked on site in their bakery every day. You will love this traditional bread’s melt in your mouth crumb and golden crust, made in accordance with precise specifications.
All industry stakeholders are managed by an independent inspection authority in order to ensure the specifications are respected.
