Ask your fishmonger for advice to discover the variety of flavours and flesh textures of the different fish available through the seasons, and most importantly line fish included in the ‘Signé Poitou-Charentes’ initiative. ‘Signé Poitou-Charentes’ line fish are identified by a tag stating the fishing technique used, the origin and freshness of the product.
A similar approach exists in the south of Nouvelle-Aquitaine implemented by the Organisation de Producteurs des Pêcheurs d’Aquitaine. These ‘Extra’ quality products are sold to fishmongers along the coast at the Saint-Jean-de-Luz/Ciboure auction. The fish are mainly bass as well as sea bream, sars and meagre varieties.
