A few rare bakeries still sell meture bread. One bakery in Salies-de-Béarn is attempting to relaunch production and carry on the tradition of this bread. Visit the Izan bakery where you will not only find meture bread, but also a multitude of other traditional baked goods (gâteau basque, pastis béarnais…).
This somewhat forgotten bread has a strong anchorage in history. Made using traditional local cornflour, it is claimed by people from Landes, the Basque Country and Béarn alike. Meture bread was a staple food which allowed famines to be avoided.
