The Pauillac lamb is the product of the savoir-faire of its breeders, who have inherited age-old traditions from their ancestors. The Pauillac lamb originates from shepherds who moved their flocks from the moors of the Gironde to winegrowing areas and their Pyrenean counterparts, and who arrived in our winegrowing and arboreal regions from the 13th century on.

Today, the Pauillac lamb production area corresponds to the departement of the Gironde. This land, with an international reputation for its vineyards, estuary and Atlantic coasts, also offers ideal conditions for sheep farming and has an impact on in the unique qualities of the Pauillac lamb. The breeds that produce this lamb are chosen on the basis of dairy ewes with maternal qualities and rams that have an excellent carcass quality. This lamb is mainly reared on its mother’s milk for a maximum of 75 days, its carcass weighs 11 to 15 kilograms.

The Pauillac lamb has a Label Rouge, guaranteeing its strong identity and its quality. It also received European recognition in the form of a Protected Geographical Indication (P.G.I.). With its white to pale pink meat, and an incomparable taste, this lamb is the pride of producers and is a delight for even the most demanding of savvy customers.
