Many varieties are grown in the Périgord and are covered by the P.G.I.: many strawberries for six months of indulgence! The Gariguette and the Darselect varieties kick start things in the spring. Then it’s over to the remontant strawberry varieties. They can be harvested in summer right up until the start of autumn: Mara des Bois, Charlotte, Cirafine and Seascape. To ensure that a strawberry has a pleasant taste, the producers in the Périgord take care to ensure a good balance between the degree of acidity and sugar content.
These strawberries are grown in the Dordogne only, in the ground, and more specifically on the wooded slopes of the ‘White Périgord’. They are grown in a mild, sunny climate and taste of the land they were grown in. Sweet and aromatic, well-balanced and full of vitamins, delicate and sweet, the six P.G.I. varieties guarantee an extravaganza of flavours and colours from the end of April to mid-October, that’s six months of pure pleasure for food lovers and gourmets! According to Michel Portos, the two-starred chef of the Saint James restaurant: ‘For a delicious sweet and savoury mix, warm pan-fried foie gras goes perfectly with Périgord strawberries, with the whole lot accentuated with ginger, a few pistachios and a dash of red wine.’
