They are reared at a very low density in oyster beds with a maximum of 5 per m², for a period of 4 to 8 months (depending on the season). As they grow, they form a lacy shell known as growth lines. During their time in the beds, the oysters fatten and develop a firm texture. On tasting, the oysters are sweet, fleshy with a nutty and long-lasting flavour.
