Productive and rustic, the Rouge Pale de Niort onion has round, flattened bulbs with a coppery-red skin and a sweet white flesh. They can be eaten raw in salads or cooked in soups, as a side to a range of prepared foods, or in sauces.

It is sold fresh at the end of the summer and is purchased by deli butchers, restaurateurs or mass catering professionals. You can also find it on local markets or on the La Rochelle wholesale market .

The reputation of the Niort onions was already well established at the beginning of the 19th century with the sale of onion plants, a trend that has never ceased to grow. This variety is planted at the end of the summer and can keep right up until April. It is dried in hot air, and then simply by ventilation. As soon as winter arrives, the bulbs start to germinate.
