Nothing more is required to make this little cake which is the pride of the city and a joy to taste, although the different companies which make it add their own secret touch to make it unique. This macaroon’s fame originates from its encounter with Louis 14th. Indeed, during the King’s wedding to the Spanish infante Marie-Thérèse in Saint-Jean-de-Luz on 8th May 1660, Louis 14th really enjoyed the macaroons that the pastry chef Adam served to him, founder of the company which is his namesake. The Adam Company still sells these little cakes under the name ‘Real Macaroons from Saint-Jean-de-Luz Paré Gabéa’, a brand it started using in 1922.
