Salmon swim in all the rivers in Nouvelle-Aquitaine to spawn and reproduce there. While there is a decline in numbers in the Dordogne and the Garonne, the Adour has an increasing population. A symbol of the river’s richness and quality of their waters, Adour salmon is today the only salmon to be commercially fished. The Adour is indeed the last basin in France where salmon may be caught. Classified as ‘at risk’ by the IUCN, salmon is undergoing a restorative effort. It is therefore recommended to adjust the amount of this fish you consume to a reasonable level and buy from an authorised fisherman.
