When to find it? All year round

Stuffed duck or goose neck is an important part of the region’s gourmet heritage, especially in Périgord. Very popular in the South-West, it uses up the duck leftovers after the so-called ‘high-quality’ pieces are removed: liver, fillet, thigh. Once the neck skin has been removed, it simply needs to be stuffed with duck or goose liver (with or without truffles) and various pieces of duck and pork.
