A somewhat dry, hard cake in the shape of a crown. This little cake resembles the padding that some women place on their heads in order to carry a load. A speciality of Bon-Encontre (47), tortillon still has strong ties to religious festivals. Its name comes from the way it twists during cooking as the French word ‘tortillon’ roughly translates to ‘twist’.
