Bread is one of the most ancient foods. Indeed, the Egyptians and Sumerians made several types of bread. The Greeks developed breads by diversifying flavours and decorations… Since the year 2000, the whole industry in Poitou-Charentes has wanted to invest in manufacturing a high-quality bread which outlines and values traditional baking savoir-faire.
For consumers, the ‘Poitou-Charentes Endorsement’ guarantees that the wheat used originates from Poitou-Charentes and that it is made into flour by regional millers, all ‘Poitou-Charentes Endorsed’.
Nowadays, around thirty bakers are authorised in this process and they are baking a traditional French bread, resulting from a long and slow kneading to achieve a properly dimpled, cream-coloured crumb and only using salt from Île de Ré.
They also make filou bread and Cabrifou to order. Enjoy them at your table!
