You can find Basque Country trout in specialist stores and supermarkets throughout the region, mainly available as smoked trout.
Basque Country trout is a brand first introduced in 2004. Trout farming is characterised by areas very close to the river which gives the trout both a firm and soft flesh. Basque Country trout is also distinctive for a lower fat content to that seen in other trout varieties.
The species bred in fish farms is rainbow trout. With a speckled appearance and purple stripe on the sides, this trout develops a tasty white or salmon-coloured flesh (the colour depends on the trout’s diet).
