How can you not be curious about what lies behind this unusual name? A speciality from Pau, this sweet is made from a toasted almond coated in chocolate, which is then covered in almond paste flavoured with raspberry, ginger and Armagnac. It directly refers to the scandalous courtships of Henry 4th. Nicknamed ‘Vert Galant’ or ‘Old Charmer’ because of his many mistresses (historians estimate around 57), Henry 4th was therefore Francis Miot’s source of inspiration, a confectioner from Pau. Invented in 1998, this sweet was chosen as France’s Best Sweet in 1999 and we still haven’t seen the last of it.
