This recipe was conceived following the partnership between the regional baking federations, the Charentes-Poitou Dairy Federation and the Chabichou and goat’s cheese routes.
The bakers who sell this original bread have been committed to a ‘Poitou-Charentes Endorsed’ approach since 2009.
The specifications guarantee the regional origin of the raw ingredients: traditional French bread made from regional wheat, soft goat’s cheese made from Poitou-Charentes unpasteurised milk and Charentes-Poitou PDO butter.
It can only be made by bakers who live in the region.
Cabrifou is a typical product made from 100% local ingredients. Its manufacture requires preparation and this is often done by bakers on the weekends, during holiday periods or upon request!
