The Samphire Producers Association of Marais Charentais (APSALIMAC) has a dozen professionals who work this unique product. Those who grow this plant are from complementary professions such as oyster or salt farming.
This process guarantees a product that comes from the salty Charentes marshland area, respect for the environment and the use of good cultivation practices. Marsh samphire shoots are selected manually. It’s a tender product that is not stringy and has salty sea flavours.
From May to September, the marsh samphire is sold fresh and can be eaten as a vegetable or as a condiment. You can find marsh samphire all year round in
jars (in vinegar, plain, or in soups).
Many of these producers have the ’Sign‚ Poitou-Charentes’ and the ‘Agriculture Biologique’ (organic agriculture) quality marks for the Charentes marsh samphire.
