A speciality from the Uzerche and Pampadour communes, but which can be found in places where chestnuts are grown, the chestnut blood sausage makes the people of Limousin proud. With its soft texture and slightly sweet flavour due to the chestnuts, the chestnut blood sausage marries perfectly with, for example, mashed potatoes.
