Rustic, calm and brave, Gascon pork is a good sort! A traditional, ancient breed, this black pig spans the northern lands of Landes, Gironde and the Basque Country, as well as the Midi-Pyrénées. Interestingly, this is the region where the Bigorre Black Pork commercial brand was created. A PDO application helped this fresh meat gain ground, just like it did for ham! You will certainly enjoy its tenderness and slightly marbled flavour.
