Jonchée d’Aunis or Niortaise is a fresh cheese, previously made from pure goat’s or ewe’s milk and nowadays more commonly produced from cow’s milk. This cheese does not have a particular shape of its own. About 20 cm long and 120 g in weight, Jonchée is presented on a straw mat.
The cheese is white and has a soft texture on the inside. It has a short shelf life. Enjoy as a dessert accompanied by vanilla and almond aromas or jams. Production is currently expanding, concentrated in the Rochefort sur Mer region.
