Langoustine is an orange-coloured crustacean that lives on the seabed, between 15 and 800 metres below the surface. Langoustine feed at dusk and dawn, mainly on small crustaceans and molluscs. It is caught by trawling the sea bed.
This ‘damsel of the sea’ measuring 8 to 25 cm and owes its reputation to its delicate flesh.
