Line bass is recognised by connoisseurs as the ’king’ of fish.
Bass is a coastal fish that is found along the Charente coastline where it hunts its prey during the summer months. Its ability to adapt enables it to enter the estuaries. It then goes to deeper waters during the winter protect itself from the cold.
Since 2000, line bass has benefited from being listed in the ‘Signé Poitou-Charentes’ initiative. The line fishing technique promotes the importance in its specifications of respecting the local flora and fauna. To keep the fish fresh, line bass is selected when boarded onto the boats. The fish must be alive and not damaged. It is immediately treated (bleeding and icing compulsory).
It is identified by a tag which ensures the individual traceability of the fish (fishing date, name of the boat, place of landing and sale of the fish). La Côtinière, La Rochelle and Royan auctions are committed to this initiative.
A similar approach exists in the south of Nouvelle-Aquitaine implemented by the Organisation de Producteurs des Pêcheurs d’Aquitaine. These ‘Extra’ quality products are sold to fishmongers along the coast at the Saint-Jean-de-Luz/Ciboure auction. The fish are mainly bass as well as sea bream, sars and meagre varieties.
