Thanks to its exceptional soil, Périgord enjoys gourmet fame, especially because of the richness and diversity of its festive products, including fattened chicken and capon.
The Périgord fattened chicken and capon, which are grown slowly and fed on cereals, are farmed free-range for 120 days for the fattened chicken and 150 days for the capon. Particularly plump, the Périgord fattened chicken and capon have highly developed and rounded muscles on their delicate frame. Under a very fine, delicate skin, their ‘marbled’ meat has an especially succulent and moist texture.
Slowly roasted in the oven, accompanied by truffles, cep mushrooms or chestnuts, the Périgord capon is the highlight of festive meals at the end of the year. Slightly smaller in size, the Périgord fattened chicken also appears in less traditional recipes which all gourmets will enjoy.
The Périgord fattened chicken and capon were awarded a P.G.I., Protected Geographical Indication, in October 2016, a symbol of quality and origin.
