Originally, P.G.I. Pyrenean Tomme was an uncooked pressed or semi-hard cheese made from pasteurised cow’s milk. In 2009, the Pyrenean Cheese Makers Association collaborated with artisans and agricultural producers with the aim of broadening their approach to raw or heat-treated cow’s, goat’s and mixed milks.
