It is the Saint-Emilion macaroons. Apart from the wines which give it its worldwide fame, Saint-Emilion has also been built on the production of macaroons since the 17th century, whose creation can be attributed to Ursulines of the time. Made from egg whites, sugar and almonds, these little discs are tasty when eaten on their own or as part of a wine tasting.
