These oysters are known as ‘Cybèles’. They are only reared in the salt marshes of Ile de Ré. The producers aim to conserve the oysters breeding environment and respect their biological rhythm.
When served raw, these fleshy oysters reveal all of their flavours, notably known for their ‘hazelnut and almond’ taste.
