Legend says that this cake was created following a chef’s inattention when he slid his baking tin into an overly hot oven and forgot about it… More realistically, making the tarte fromagère into the tourteau fromagé seems to result from the specific savoir-faire of Poitou-Charentes residents.

The origin of this product, often called ‘fromageou’, seems to be attached to a very specific area in the region located ‘in the outskirts of Mothe St Héray, Niort or Melle’, as Léopold Favre stated in 1867. It can also be found in the areas of Brioux sur Boutonne, Lusignan and Lezay.
