This cake symbolises the 3 departments which make up Limousin: Corrèze, Creuse and Haute Vienne. Each of these departments have their own pastry speciality, the galette corrézienne, the Creusois and the Bourgou.

This cake was born from the imagination of pastry chefs from the 3 departments who shared a desire to create a cake which represented their region. After many months of tests, recipes and names, the Trépaïs (Three countries in Limousin dialect) was born. It has a triangular shape, each point representing one department. The Trépaïs is comprised of a chestnut mousse, a dark chocolate mousse, a hazelnut dacquoise and a crunchy hazelnut praline.

The two mousses are placed on top of the praline, surrounded by the dacquoise which is then all coated with a chocolate glaze. An association comprised of around fifty pastry chefs was established to protect and value this creation.
