Extracted from the nuts collected in the region, walnut and hazelnut virgin oils were added to the ‘Signé Poitou-Charentes’ initiative in early 2015.
Once harvested, nuts are dried, cracked and sorted. Kernels are selected according to very specific criteria in order to produce a quality virgin oil. Exclusive to the region’s specifications, kernels must be crushed in a traditional way, using a stone mill! To avoid any bitter taste, the industry has forbidden the use of mechanical mills. Virgin oil may be produced by cold pressing. This enhances the fruity flavour. Hot pressing enables more roasted, typical walnut flavours to appear. Just like other ‘Signé Poitou-Charentes’ virgin oils, (sunflower, rapeseed, linseed, hemp and camelina), these oils do not undergo any chemical treatment or processing.
Since 2015, hazelnut virgin oils have also benefited from the regional ‘Signé Poitou-Charentes’ initiative. Perfect to enjoy with vegetables crudités and endive salad, from the region, of course!
