Watercress is grown in the ground, on the edges of waterways and in watercress beds. In the Nouvelle-Aquitaine region, watercress is mainly produced in the Lot-et-Garonne, and more specifically in the Agenais river which is the largest watercress bed in Europe.
Rich in vitamins and in minerals, it is a healthy, natural foodstuff. When minced, it can be used like parsley, in salads, on pizzas, in a pesto on hot pasta, and so on. You can also eat its leaves just like you would spinach leaves.
