The xingar (pronounced Chingarre) is also commonly called ‘ventrèche’. A product that is traditionally eaten in the countryside, it is a pillar of the Basque Country’s food. The pork belly it is made from is used in different ways: rolled or flat, fresh or dried, salted, peppered, smoked or even spiced.
