Sylvain Mauran is chef of his own restaurant, L’Ephémère, located on the quay of the town of Ciboure. For Sylvain Mauran, ‘The French word éphémère (ephemeral) is what fills us with joy, transports us away for a few moments and is something that remains with us.’ In keeping with this epicurean definition, he has designed his restaurant to be a ‘table is which you spend a good tight, not uptight, without an over-the-top service’.
