Sold on local markets (cooked and ready to eat) where well renowned, white prawns are also found in some fishmongers and supermarkets.
Exclusively estuary prawns or living in brackish environment, white prawns can be found in the largest French estuaries (the Loire, Adour and Garonne). Caught mainly in Gironde, white prawns are the ultimate Gironde appetiser to serve. Often sold cooked, these little prawns are unlike others as they remain white after cooking.
Star anise is often added during cooking to give them the aniseed aromas, so sought after by connoisseurs. Enjoy them with a well-chilled pastis or a glass of dry white wine!
